I always like to bake this grainy, nutty bread. It is ready in just a few simple steps and full of valuable fiber.

Even if white bread “imitate” is very popular among Ketarians, I think that a strong, rich grain bread like this is simply tastier and more filling. The mix of chia seeds, gold linseed and sunflower seeds makes this bread a real delicacy.

It is suitable for every imaginable topping: whether spicy with spread, cheese, salami, ham or as a sweet variant with butter and a dollop of sugar-free jam, the grain bread always tastes wonderfully juicy and spicy.

The bread will fill you up for hours. And that at just 1.4 grams of carbohydrates per serving (30g).

Children also like to use this bread. Probably because all the grains are finely ground so that the bread has the right “bite” but without chewing on any grains.

I actually always cheer my seven year old on this bread and let him believe that it is a completely “normal” black bread….

This ketogenic bread tastes great!
The recipe makes 1 loaf of approx. 920 grams.


  • For the dough:
  • 100g ground almonds

  • 50g gold linseed

  • 20g coconut flour

  • 50g psyllium husks ground (I use mivolis from DM)

  • 50g chia seeds

  • 50g sunflower seeds

  • 1 pack of tartar baking powder

  • 1 teaspoon salt

  • 3 teaspoons of bread spice

  • 2 packs of dry yeast (for taste)

  • 3 tbsp apple cider vinegar

  • 5 eggs

  • 250g cottage cheese

  • To sprinkle:
  • Sesame seeds


  • Preheat the oven to 200 ° C top / bottom heat.
  • Finely grind gold flax seeds, chia seeds and sunflower seeds in the food processor (or in a coffee grinder).
    Put the ground grains and the remaining dry ingredients in a bowl.
  • Puree the eggs with cottage cheese so that no bits of cottage cheese can be seen.
  • Add apple cider vinegar and add the mixture to the dry ingredients.
    Mix vigorously until the dough thickens slightly. Now let the mixture rest for five minutes.
  • Now place the dough ball on baking paper and shape into a loaf with damp hands. Sprinkle the loaf with sesame seeds and press them down lightly.
  • Place baking paper with bread dough on the wire shelf (not on a baking sheet!) Of the preheated oven and bake for 45 minutes.
    At the end of the baking time, take the bread out of the oven and let it cool down on a few layers of kitchen roll.
