Preparation of a hollandaise sauce - the basic recipe

Don't be afraid of homemade hollandaise sauce: you just need a little time and leisure and the right temperature of the ingredients to get this cooking method at home. The egg yolks should be room temperature and the butter should be melted liquid. There are different forms of preparation:

  • Separate the egg; Use egg yolks for the sauce. The egg white is not needed (you can use it for a delicious rhubarb cake with meringue, for example).

  • If the sauce is too thick, add 1 tablespoon of water or stir in some white wine vinegar or lemon juice, which is poured in in a thin stream, until creamy. Season to taste with salt and pepper.

Recipes for hollandaise sauce

There are many recipes for the hollandaise sauce, which ultimately vary the basic recipe with different seasonings and liquid additives, the simplest here is cold water. Often the basic sauce with white wine, white wine vinegar or lemon juice is added as an acid component. Seasoning with Worcestershire sauce or mustard is special, but not uncommon. Each sauce variation is seasoned with salt and pepper.

A hollandaise sauce is often used to make a soup. Mix the asparagus water with the hollandaise until smooth and season accordingly.
